I actually love tripe – once it was cheap, however the cost has gone up for this offal. Tripe really does not have much taste so seasoning is needed. I have never tried it in milk with onions as suggested by many. I just quickly fry in the pan with “plenty” of salt and pepper. Tripe is not just a doggie delight.
